Ingredients:
- 1 cup (2 sticks) unsalted butter, softened
- 1 cup granulated sugar
- 1/2 cup packed light brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 tablespoons instant coffee granules, dissolved in 2 tablespoons hot water
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup semisweet chocolate chips
Directions:
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy. Beat in egg and vanilla.
- Stir in dissolved coffee.
- In a separate bowl, whisk together flour, baking soda, and salt. Gradually add dry ingredients to wet ingredients, mixing until just combined. Stir in chocolate chips.
- Drop by rounded tablespoons onto prepared baking sheets.
- Bake for 10-12 minutes, or until golden brown. Let cool on baking sheets for a few minutes before transferring to a wire rack to cool completely.
