Here's a poolside cocktail recipe that's both refreshing and boozy, featuring a touch of tea for a unique twist:

Earl Grey Infused Peach Bellini

This recipe makes 1 serving.

Ingredients:

  • 2 oz Earl Grey infused vodka (see below for quick infusion instructions)
  • 2 oz fresh peach purée
  • 1 oz prosecco or other sparkling wine
  • Peach slice for garnish (optional)

For the Earl Grey Infused Vodka (makes about 1 cup):

  • 1 cup vodka
  • 2 Earl Grey tea bags

Instructions:

  1. Make the Earl Grey infused vodka (optional, but recommended): In a clean jar, combine the vodka and Earl Grey tea bags. Seal the jar and let it infuse in the refrigerator for at least 2 hours, or ideally overnight. Strain the vodka into a clean bottle and discard the tea bags.

  2. Assemble the cocktail: Fill a shaker with ice. Add the Earl Grey infused vodka, peach purée, and a splash of prosecco. Shake well for about 15 seconds.

  3. Strain the mixture into a chilled glass. Top with the remaining prosecco.

  4. Garnish with a fresh peach slice (optional).

Tips:

  • If you don't have time to infuse the vodka, you can use plain vodka and add a splash of Earl Grey tea to the shaker.
  • You can adjust the amount of peach purée to your taste preference.
  • For a non-alcoholic version, simply omit the vodka and add an extra few ounces of sparkling white grape juice instead of wine.
  • Feel free to experiment with different tea flavors like blackcurrant or raspberry for a unique twist.
